A week late, but before Christmas, here's Corn Bread, and soon to follow will be Dressing and Giblet Gravy. This was written for Karen on Steele Machinery stationery, and next to each recipe Mother wrote "my own recipe." By the way, as you spelling mavens may have already noted, but were too polite to mention, I corrected Mother's spelling of meringue, and then Karen, discreetly, corrected mine. She's right, of course.
Corn Bread
3 cups Meal (yellow)
1/4 Cup flour
1 tablespoon baking powder
1 1/2 teaspoon sugar
dash of salt
1 large egg or 2 small ones
about 1 1/2 cups of sweet milk or enough to make a nice batter.
Make in cake pan 350 degrees
Well greased. I like to heat the grease and sprinkle dry meal. Keeps from sticking.
