Mom's Recipes 2

Maybe I should amend "editorial comment" in the previous post to read "judgmental/condescending remarks." A little context is often needed, don't you think? According to mother, this was Gregg's favorite pie. He'll have to confirm that. Recently, during one of our many conversations on this topic, he led me to believe that it may not be true. (Remember, I don't correct spelling. Luckily, as a rule, mother was a very good speller.) Also, this and first recipe were written on 3x5 index cards, which is why the directions sometimes look like poetry.

Lemon Marange
1-9 in. Crumb Crust, Chilled
1-Can Eagle Brand Sweetened Condensed Milk
1/3 cup Lemon Juice
2 to 3 tsps. grated Lemon Peel (optional)
3 egg
1/4 tea spoon Cream of tartar
Pie Crust
Crush graham crackers, add
butter.
Pie Filling
Pour Condensed Eagle Brand
Milk in bowl, add Lemon Juice
Then add beaten egg yolks.
Then peeling.
Save whites for topping --
Beat whites a little, then
add 2 pinches of Cream of Tartar
Keep beating, add 1 tablespoon
Sugar. When stiff add on top
of filling--cook until Marange is
brown, then cool in ref.
